No-Bake Gingerbread Energy Bites

Ingredients

  • 1 cup (250 mL) walnuts
  • 1 cup (250 mL) rolled oats
  • 1 cup (250 mL) whole soft dates, about 10-12
  • 1 Tbsp (15 mL) blackstrap molasses
  • 1 tsp (5 mL) cinnamon
  • 3/4 tsp (3 mL) ground ginger

Directions

Add all ingredients to food processor and blend until well combined. If mixture sticks to edges, scrape down with rubber spatula between blending.

Roll 2 Tbsp (30 mL) mixture into balls with your hands. Place balls onto parchment paper-lined plate and place in fridge for at least 15 minutes before serving.

Store in fridge for up to two weeks.
